The Government Has Been Putting This in Your Bread Since 1998

Take a loaf of enriched bread from your kitchen and read the ingredients carefully.

Somewhere on that label, you may see a familiar-sounding ingredient: folic acid.

It sounds harmless—and for most people, at normal amounts, it is. But here’s something many consumers don’t realize:

Folic acid and the folate naturally occurring in food are not exactly the same thing.

And since 1998, folic acid fortification has been required in certain enriched grain products in the United States, including enriched flour, bread, pasta, rice and cornmeal.

So why did the government put it there?

It Started With a Very Good Reason

Folate, also known as vitamin B9, is essential for making DNA, forming healthy new cells and supporting normal development.

It’s especially important during the earliest stages of pregnancy. Insufficient folate increases the risk of serious neural-tube defects such as spina bifida and anencephaly.

Because many pregnancies are unplanned—and the neural tube develops very early—the FDA authorized folic-acid fortification of enriched grain products in 1996, with mandatory compliance by January 1998.

And the program worked.

Research following fortification found a significant decline in neural-tube defects. One national study reported about a 19% reduction after mandatory fortification.

But here’s where the story gets interesting.

Folate and Folic Acid Aren’t Identical

Folate is the general term for vitamin B9 and occurs naturally in foods such as spinach, asparagus, Brussels sprouts, oranges, beans, peas, nuts and liver.

Folic acid is a synthetic form of folate used in fortified foods and many dietary supplements.

Your body ultimately converts folate forms into biologically useful compounds involved in cellular processes. Folic acid is particularly stable and actually has greater bioavailability than naturally occurring food folate under many conditions.

But large amounts can result in some unmetabolized folic acid circulating in the bloodstream. The long-term clinical significance of this remains an area of research—it should not automatically be interpreted as evidence that fortified bread is toxic.

Another concern with excessive supplemental folic acid is that high intake can correct the anemia caused by vitamin B12 deficiency while potentially allowing neurological damage from the B12 deficiency to continue unnoticed.

That’s why more isn’t automatically better.

What About MTHFR?

You’ve probably encountered social-media claims saying people with common MTHFR gene variants cannot process folic acid.

That’s an exaggeration.

The CDC specifically states that people with common MTHFR variants can process folic acid, and these variants are not a reason to automatically avoid it. Importantly, folic acid remains the form with established evidence for preventing neural-tube defects.

So don’t throw your bread away because someone on the internet told you that your genes make folic acid poisonous.

A Better Way to Get Your Folate

Start with a varied diet.

Dark leafy vegetables, beans, peas, asparagus, citrus fruits, avocado and other whole foods can provide naturally occurring folate alongside fiber and numerous other nutrients.

Read labels, too. If you’re eating several fortified foods while also taking a multivitamin, B-complex and separate folic-acid supplement, you may be consuming far more than you realize.

Most importantly, don’t discontinue medically recommended folic acid because of alarming online claims. People who could become pregnant are specifically advised to obtain 400 micrograms of folic acid daily in addition to consuming food folate, because folic acid is proven to reduce neural-tube defects.

Fortification wasn’t some secret experiment. It was a public-health intervention that produced measurable benefits.

The better question isn’t, “Why are they putting chemicals in my bread?”

It’s: “How much folate do I actually need, where am I getting it from, and am I unnecessarily adding more?”

Because even with vitamins, more isn’t always better.
